Xbox uses Bink/Smacker Video for most of their video and wma for their audio. Some Mpeg2 has also been done.
PS2 is still using XA, which can be compared to a good mp2 they're also using Mpeg2 for their video (if the shoe fits, wear it)
GC is using ADX mostly and some funky weird wav differentiating for compression. GC is also the first system to support Mpeg2, Bink/Smacker and DivX. DivX networks is releasing GC SDK's right now for video/audio compression in games.
