I haven't tried flying the He-111, but the only other flyable bomber in IL-2 (currently, more will soon be added) - the TB-3 (Slowest. Plane. Ever.) - reminds me more of commanding a ship than flying a plane. It would really be boring if you were stuck in the same seat for the whole mission. Luckily, you can switch positions on the fly, which makes it lots more fun. I usually just take off, then go to the bombardier's seat or one of the gunners, then land myself. The rest of the flying I leave to the AI.
As for the single-bomber missions - those can be done really well in IL-2. Granted, you probably wouldn't last long against the fighters

But if you go just against flak, you'd most certainly be coming back home with some damage (emergency procedures in a sim - some real excitement

)
