VirtualDubMod

Use Direct Stream Copy mode (you'll find it under the Video menu). This will allow the raw video stream to be saved to an AVI without degradation. You may not be able to use the audio, though, since AVI doesn't like Vorbis-formatted audio too much (although there have been hacks to make it work). And most OGMs use Vorbis audio, even though it can use MP3.

Well, of course. If you are going to use a Free container format and (hopefully) Free video CODEC, why would you use a non-Free audio CODEC? :P

Just don't think that you'll be able to edit with that. If you need editable footage, then you've got to convert to an editable codec, preferably something lossless like HuffYUV or Lagarith, in which case you would want to use "Fast recompress" mode instead.

And of course, if you're going to go the lossless route, then don't even think about saving the entire episode. Just cut the clips you need.
