If you already own the DVD, then just rip the disk as mentioned in the guides. If for some weird reason you need the audio (say to include some sound effects for a particular section) then just rip the audio as well. I suggest just making your own subtitles instead of trying to use existing ones.

But yeah, in any case take virtualdub mod and save the sound out as a .wav file. That should answer your original question.
