I thought it was cool in Mysterious Cities of Gold at the ending episode and also when they find the Golden Condor.

My other favorite is the fight with Beryl in Sailor Moon with the song "Carry On" playing in the background.

There are lots of LOL moments in that series. It's one of my favorites though.

I liked Cowboy Bebop and Trigun. They don't necessarily fit this theme but they were good suggestions because they are anime that I like.
