Initial D soundtracks (especially Battle Stage). I've been listening to them constantly for the last month. Most of the songs are in english but what the hell.

Of course it depends on what you class as pop and what you don't, but on general priciple I will recommend L'Arc en Ciel, The Pillows (FLCL soundtrack) and Boa. Although Boa are an English band, most of their success has been in Japan (eg Serial Experiments Lain intro song), so they half-count :P I mention them because they are a *very* good band.

I wouldn't call The Pillows 'pop' but if that's the kind of music we're talking my recommendation would be Do As Infinity.

I think Etsuko Kozakura, Tomo Sakurai and Kajiura Yuki are good, too.

Pillows you could classify as a 'pop-rock' thingy. I've listened a lot to their FLCL-related stuff and it's all absolutely neat. Right now have "Blues Drive Monster" stuck in my head.

J-Pop, oh J-Pop. The only sort of music with "pop" in it's title I ever fall for... But God I can't not like it... nobody doesn't like J-Pop... still don't know why.

Namie Amuro, Mai Kuraki, Kuda Kumi and BoA are all pretty cool. The BoA i'm referring to is the Korean one, not the English one.

Namie Amuro songs I recommend are: Mi Corazon and Try Me

Kuda Kumi songs: Real Emotion, can't remember the other; 1000 words or something...only heard those 2 so far by her

Mai Kuraki i've only heard one by her: Feel Fine

BoA: Valenti (Korean and English versions), Amazing Kiss, Winding Road, Searching for Truth, Jewel Song and Feel the Same
