A few times a year, after we've accumulated a bunch of non-perishables that we don't use, I take a few hours looking around trying to find something to make from it all. My most recent endeavor turned out to be awesome. We had frozen chicken (4 boneless breasts), canned garbanzo beans, canned pumpkin, evaporated milk, and some fresh onions and carrots that weren't going to be used. I had just run out of, and then restocked, curry... so I got to thinking: pumpkin curry!

I started by pre-cooking the chicken breasts (cut into 1/2 inch cubes) in coconut oil. Cooked them on low heat while I diced up the potatoes (1/4 inch cubes so they don't take too long to cook) and onions, and took them off heat before they were fully done because they'd finish cooking later. Using the same pan I sauteed the onions for 10-15 minutes mostly to infuse the oil, while I peeled the carrots and julienned them. Once the onions (yellow for this attempt) were done, almost translucent, I added some evaporated milk and canned pumpkin and whisked it together. This was an experiment, so I did this all gradually, but I ended up using one can of pumpkin and one can of evaporated milk (whole). Once there was sufficient liquid I added the potatoes and let them stew for 10 mins or so before adding the carrots. During this time I added a few tbls curry and a bit of salt, paprika, cayenne, cumin, and brown sugar. Everything to taste. The whole curry cooking process took about 45 minutes, but I think it can be done a lot faster. I had to add about 1/2 cup chicken broth because it was too thick during the cooking, but I think if the pumpkin, milk, broth, potatoes, and seasonings are added at once, you should be able to let it cook on a high simmer/low boil for 20 mins or so. When the potatoes were nearly done, I added the garbanzo beans and the almost-cooked chicken and let them finish on medium, stirring often, for about 10-15 mins.

Going to try this again using zucchini instead of chicken, low-fat evaporated milk, and maybe lentils? Guys, this is a super simple recipe and it's one of the best things I've come up with.
