I'm assuming you have the AMVapp and have a general knowledge in the use of Avisynth, DGindex, and VirtualDub?

I'll hold off on my explanation until you do (because you need those programs)

I use a program called BeHappy to convert the audio to 6 separate wavs. The "dialog channel" is usually the center one but don't assume it's only dialog, there's most likely going to be other audio in there as well.

Oh, wait...you mean JUST the dialogue? I thought you meant the audio from a DVD in general.

Most audio processing apps can do it, especially if they're lavc based. That said, it is super rare for only one channel to be dialogue. Usually it's L, R, C depending on scene, with random effects added onto the other channels. I'd personally go with avconv direct, or otherwise BeHappy like wolf said.

eac3to can do it as well really easily if you know how to use the program, it's like one flag or something. Probably the fastest way and it should work on OSX in wine.
