Is there some sort of guide that shows how to use virtual Dub?

Or can someone just explain how to cut out a moving image. I heard that this is doable with VirtualDub so I got it. I'd rather do this than green screen so I was wondering.

there's a section on using virtualdub/mod in eadfag mk2 here

Unless vdub/mod has a plugin for it, you can't mask/roto out a character using vdub/mod (that's the realm of programs like after effects. Vegas can also do this, as can premiere albeit more restricted)
