Dunno about Eva, but in the case of Haruhi it took some time for the 'virus' to catch on. Hell, even I'm only a recent 'convert'.
Megaman just posted it at a strategically-correct moment for people to start posting it, now that there's as many people interested in Haruhi as there are pictures floating around.
...by the way, did noone find the fact that I actually went out and posted a whole bunch of screencaps on this forum odd? I think it's the first time I actually posted anything substantial on here.

It's mainly because it has pretty distinct, fairly realistic characters, yet an absolutely absurd story. It basically appeals to everybody: it's a comedy that's consistantly funny, it has as much fanservice as a Ken Akamatsu story, it's got a complex subplot like Eva, the animation never degrades, and it has a pretty strong romantic plot to it. It falls under so many genre categories its scary.
