In Photoshop, one of the tool buttons is called "Magic Wand Tool", it's near the top buttons.
This neat little button allows you to select one unicolored object completely. So lets say you have a red ball in the center of the picture, and an entirely green background. If you use this tool and select the green background, the entire green background can be edited, and the red ball will not be affected.
After the solid background is selected, you can erase the green, then you only have the red ball, and you can paste only the ball into some other picture.
That's kinda the gist of it, it's not the best explanation, but I think it should give you a good idea of how some of us do it.
