It's *because* it jumps around so much that makes it memorable. Honestly, you've unleashed a monster! But a good one.

Since your video is made up of different couples, and different well-known love songs, that makes the song easy to learn (I think I learned most of it after watching your video about 5 times). And it helps when you think about the anime characters "singing" the lyrics, so that also helps to get it stuck in one's head.

Ug, I know what you mean. It's such a creepy feeling, when your video plays entirely through your head, when you hear the song. It's especially not good when driving in the car, cuz then I get all distracted thinking about the video. Yikes.
