Depends on a lot of factors, such as if it is moving, the I handle things differently. I prefer to edit one frame (and recreate any part covered up if i have to) in photoshop for one frame, then pull that into After Effects, resize it frame by frame, then disable every layer but the text/changes in the photoshop file after doing the work in After Effects. Twisting items can cause interesting challenges too, but if you use an existing item in the photoshop file that you can "size it to" when in After Effects it avoids that "jitter" you often get if you try to size JUST the text or picture by eye with no aid (it works kind of like a guide). It sounds a lot more intense than it really is...
