I use dvdDecrypter, but the terminology should be similar if you use something else.

angle is how dvds deal with multiple footage tracks.
let's say you have 2 tracks (A and B, for ease let's say that A is color and B is black and white) that you want to put onto the dvd. You take a small chunk of A, put it onto the dvd, then take a chunk of B and put it on the dvd (so it looks like ABABABABAB...until you're done)

dvd players know how to handle this, so it's not usually a problem.
If you rip your dvd in file mode however, it doesn't take all the A or all the B chunks, you get everything. This would cause your video to look like it was playing a small part of the color version, then playing the same video in black and white.

To solve that, you'll want to rip in ifo mode (which may mean you have to rip 1 file/episode at a time, then select the next file/episode and hit 'rip' again)

that said, most anime dvd's don't have mutliple angles. Ripping in file mode is more convenient...so I'd just do that and switch to ifo mode if you do run across a dvd like that

It was an interesting feature that the DVD spec allowed for that most DVDs don't make use of. There are a few movies that offer multiple angles of a scene in their full director's cut versions, and some companies use the angles to have floating subtitles appear on screen to translate signs and whatnot. I hear it's actually used somewhat often in porn too.
