There's a program called Bink And Smacker for the viewing of Final Fantasy 8 files. It's available for download <a href="http://www.radgametools.com/bnkdown.htm">here</a>. It's a free program, despite what the big sign says to the side of the page. This program is only for viewing of the extracted files; you'll also be able to convert them to AVI files without audio with this too using whatever codec you want. I really suggest Huffyuv, since it is CG footage.
Actualluy, I just found the site where I downloaded it. It's available at <a href="http://www.qhimm.com/">qhimm.com</a>. If you go down a bit, you'll see a download called FF8FMV.zip. That contained the Bink and Smacker (which most likely needs to be updated) and the Final Fantasy 8 extraction program. It's pretty easy to learn once you do it a couple times, but it takes a while to get all the footage that you.
Also, I suggest doing an action video instead of a romance (I did a romance). There are less action videos for Final Fantasy 8, so it will be much more appreciated. Plus action videos are a lot more fun to create, but that's just my two cents.
