The String Quartet Tribute are a good choice, they do a mixture of Rock covers all in classical form whether its Led Zeppelin or Muse.

One of my favourite Instrumental songs is:

Hope of the States - The Black Amnesias

So Epic ^^.

Well since everyone knows Nobuo I won't mention him, whoops i did just now... anyway...

Takeharu Ishimoto (Crisis Core, The World Ends with You)
-he made arrangements of Nobuo's FFVII work on the Crisis Core ost which are going into the progressive metal direction, he is a wicked guitar player
-The World Ends with You is a DS game, not sure what type of game.. well this ost has a lot of lyrics so not relevant for this thread
Yoko Shimomura (Parasite Eve, Legend/Heroes of Mana, ...)
-she is more the type to make epic orchestra soundtrack, so I'd suggest her drammatica album, other good stuff is mentioned above.
Motoi Sakuraba (Valkyrie Profile, Tales of, Star Ocean, and a lot more)
-he has a huge body of work, probably more than Nobuo Uematsu. He likes to make Arrange albums of his work, which I's suggest on checking out. His work on Valkyrie Profile is pretty awesome, especially on VP2!
Yasunori Mitsuda (Chrono Cross, Some Bringer, ..)
-he makes soft, relaxing pieces, havn't gotten into him a lot yet
Masashi Hamauzu (Dirge of Cerberus, Final Fantasy X, ...)
-I couldn't get into him yet, but there are a lot of individuals who praise him
Hitoshi Sakimoto (Final Fantasy XII)
-I'd say the same as at Hamauzu, but well I didn't enjoy FFXII ost so I never looked more into his work
Junya Nakano (Final Fantasy X)
-only know him for FFX ost, but he made some awesome stuff on that one
Shoji Meguro (Persona 3, Persona 4)
-mastermind behind Persona 3 and 4 osts, he has a very unique style which is hard to describe, I love some of his guitar driven works.

Well these are the most popular composeres and I just realized that they are all from Square Enix except Shoji... well it happens :P
