What's some music with great crescendo/climax sequences?

(Mars tends to be performed with one hell of a crescendo)

Also, I can't omit a personal favorite - King Crimson's "Starless", a 12-minute ballad which spends its final 8 minutes as a buildup starting around single-note sequences.

I think you've already heard them, but Ayreon's "Day 20: Confrontation" and Pain of Salvation's "Iter Impius" both have amazing crescendos. Unfortunately I can't think of any more right now.

Pretty sure when I climax I scream notes no one has yet to decode on a general scale.

They've been decoded, but we've yet to arrange a table and graph to properly place them in since they only exist in a 9 dimensional theory at the moment.
