T.M Revolution, Nami Tamaki, Yoko Kanno (personally I love her work)
the pillows (featured in FLCL), Dream (did one of the better closings for inuyasha imo)
all good imo, there are more, but these are the only ones that come to mind

...just thought of more
YeLLOW Generation, Larc~en~ciel (did the first opening for FMA)

Ayumi Hamasaki and Utada Hikaru are the first two that come to mind.

GLAY and Siam Shade are pretty good too.
