For me personally, rap falls under poetry more than music. That's not to take away from it, but the musical dimension of it does tend to be rather thin. Hip-hop is another question, of course.
Rock? I think the fact that rock is a genre is a sort of illusion. You can lump everything in like you did, but then realize that a person who listens to death metal on the one hand, and a person who listens to Good Charlotte really have little in common with each other - except the fact that their music in both cases originated in rock.

I almost completely agree with you, except one thing. Rap IS like poetry, but all it generally talks about is getting in girl's pants, more rape, wanting a girl, etc. It's just the same thing over and over again, with a few clicks and beats in the background as an excuse for bgm, then someone talking about the same stuff mentioned in a non-singing voice. It requires no talent to speak rap, except to be able to rhyme a million things relating to clubs and getting girls. If rap is mainly by a girl, then it's about getting a guy, and their music videos are the worse, calling moving their butts up and down dancing when all it is is trying to get attention through what they think they have. Most Rap is the same to my ears, and it almost always ends up with me gaining a headache from the repetitive annoying clicking in the backgrounds. The only Rap i can stand is by Eminem because his stuff is usually either funny, or deep, and almost always has a meaning more than "i want a girl" or "i want you in bed" > >
Rock on the other hand almost always has a meaning, though i can say that sometimes it doesn't. Rock is a rough way of looking at it. There's Classic Rock, Alternative Rock, Soft Rock, Hard Rock, Metal, Thrash, Emo Rock, etc. which could ALL be considered in just the one word - Rock. It's true that someone who likes something in Thrash or Metal probably wouldn't like something in Emo Rock or Soft Rock, which is what makes the one word so rough. I like all kinds except Hard Metal (depends if they sing at all. i won't listen if it screams the whole time > >) and Thrash.
Overall, it all depends on the person, whether they like a wide variety of things or not. If they do, then they do, and if they don't, then they don't. Bottom line.
The reason that most of the songs used for AMVs are Rock is because Rock almost always has a meaning in it's music, and people try to put meanings into their videos, plus, it's been proven that most people who like anime like Rock music over most other genres of music. > >
